I'm the owner of The Bakery in Rialto, Dublin, where we take traditional Irish baking and give it a modern twist, and Ernie's at the Shackleton Experience in Athy, Co. Kildare, where local ingredients and warm hospitality are at the heart of everything we do. Across both businesses, I love showcasing the very best Irish ingredients, creating dishes and bakes that honour tradition while bringing a fresh, modern perspective.
